Seppankizhangu Fry – Arbi Fry

There are different types of veggie fries that we serve as a side side. Colocasia is a nutritious root vegetable. It is just cooked like potatoes and then used in dishes. It is popular in South India and we add spices and fry it to serve as a side with rice and sambar or rasam.

Try this easy and delicious fry and you will also become a fan of this vegetable. Kids will also love it.

  • Seppankizhangu –  250 grams
  • Sambar powder – 1 tbsp
  • Chilli powder – 1 tbsp
  • Coriander powder – ½ tbsp
  • Turmeric powder – 1/2 tsp
  • Corn flour – 2  tbsp
  • Asafoetida – 3 pinches
  • Salt to taste
  • Oil -5 tbsp

Method of Preparation:

Wash the seppankizhangu. and pressure cook with 2 cups of water for 2-3 whistles or until just cooked. It should not be over cooked. Turn off the stove.

After 10 minutes remove the lid and strain the cooked vegetable. Wash with cold water only then we can remove the skin easily.

In a plate or bowl  add sambar powder, chili powder, coriander powder, turmeric powder, corn flour, asafoetida and salt mix it well. Masala is ready.

Slice the cooked vegetable, add it to the bowl with the masala powder. Mix well to coat it all the sides with the masala. Heat a non stick pan and add 2 tbsp of oil. Drop a few slices into the oil and allow to fry over low heat. After a few minutes turn the fried slice and cook the other side. Like this fry the remaining sliced vegetable with the rest of the oil.

Crispy and tasty Arbi fry is ready.

Once it is done you will see some of the masala sticking to the pan. Instead of wasting it add a little rice and mix well. This will be wonderful to eat.
